Italian nachos


What to do when one of kids uses up all the refried bean and you still have a pound of tortilla chips and shredded cheese.   The leftover spaghetti sauce called out to me, so I improvised. Chips, spag sauce, cheese, a few minutes in the microwave, and wah-laa, my kids can’t eat them fast enough.  Next day there was left over pot roast, so it went over the spaghetti sauce, and it was gone just as quickly.  The only thing the chips get soggy real fast, so a fresh pile of chips is needed to scoop out the cooked ones, but no one is complaining.
